In a large shallow dish, COMBINE curry, cayenne, salt, and pepper; also see NOTE 1 about Thai style.

ADD chicken a few pieces at a time, TURNING to coat.

In a large saucepan over medium heat, ADD oil; STIR in chicken, carrots, bell pepper, and onion; COOK for 4 minutes.
4.
STIR in garlic; COOK 2 minutes longer, or until chicken is browned and vegetables are tender; DRAIN.
5.
STIR in beans, broth, tomatoes and water; bring to a BOIL; SIMMER for 30 minutes.
6.
STIR in coconut milk; HEAT through.
