Mark's Chicken Roll-ups
Chicken breasts rolled with bacon strips and feta cheese

FRY bacon until slices just start to crisp; REMOVE from skillet; DRAIN on paper towel.

Meanwhile, PLACE chicken breasts between sheets of wax paper; gently POUND chicken breasts until uniform 3/8 inch thickness.

In a small mixing bowl, COMBINE oil, lemon juice, garlic, oregano, salt and pepper.

BRUSH each chicken breast with oil mixture, coating both sides.
5.
LAY chicken smooth side down; PLACE bacon strips and feta onto lower third of each breast half; carefully roll up each breast half lengthwise so that chicken overlaps; SECURE with toothpicks.
6.
ARRANGE roll-ups, seam side down, in a baking dish; PREHEAT oven to 350°.
7.
BAKE chicken until cooked through, about 30 minutes.
