PREPARE broccoli by coarsely chopping flowerettes and shredding outside of stems using a vegetable peeler.
2.
MIX broccoli flowerettes and shredded stems with onion, cheese, vinegar and sugar; FOLD in enough mayonnaise to bind mixture together.
3.
OPTIONAL: If desired, FRY bacon; CRUMBLE; STIR into salad.
