Herb Rub If Not Premixed
Directions

# NOTE: If premixed herb rub is not available, COMBINE the seven Herb Rub ingredients in a small mixing bowl.

PREHEAT oven to 325°

In a small mixing bowl, STIR together the herb rub, garlic and olive oil.
4.
RUB herb mixture onto roast.
5.
PLACE roast, fat side up, on rack in open roasting pan LINED with foil; BAKE for one hour.
6.
COVER roast; BAKE until meat thermometer registers 165° F--CHECK temp in another hour.
7.
REMOVE from oven; allow to STAND for 15 minutes before carving.
