WASH potatoes with skins; in a large saucepan, bring water (enough to cover potatoes) to boil; ADD potatoes; COVER; COOK for five minutes; REMOVE from heat; let stand for five more minutes, covered; COOL in refrigerator.

2.

When ready to prepare, DICE potatoes into 1/2" cubes.

ADD oil (enough to cover bottom) to skillet; HEAT to 350F; ADD potatoes.

4.

COOK until brown and crisp, STIRRING regularly.

5.

REMOVE potatoes to bowl lined with paper towel to catch excess oil; SEASON to taste.
