PREPARE potatoes; PRESS between paper towels to remove excess moisture.

2.

In a mixing bowl, COMBINE potatoes with onion, egg, flour, salt and both peppers, MIXING well.

3.

HEAT oil in skillet to 375 F.

4.

Use 1/4 cup measure to dip up potato mixture; PLACE in hot oil; FLATTEN into 3-inch rounds with back of fork.

5.

FRY until golden brown, TURNING once; DRAIN well.
