1.

In large mixing bowl, STIR together the warm water, yeast and sugar; when mixture becomes foamy, ADD the oil, salt, and enough flour to make a stiff dough; KNEAD until smooth;

PLACE mixture into a lightly oiled mixing bowl; COVER with a cloth towel; allow to RAISE until doubled in size.

In a separate bowl, STIR together the 6 sauce ingredientsSET aside.

In a small skillet, COOK the sausage, STIRRING lightly, DRAIN.

MICROWAVE pepperoni for 20 seconds; PAT DRY using a paper towel.

Once dough has risen, SEPARATE into two equal balls (9 ounces each); USE one ball to make the pizza crust

PRIME cast iron skillet by drizzling just enough olive oil to provide a very light coating for spreading the dough.

3.

USING your fingers, lightly SPREAD the dough so that it covers the bottom and about halfway up the sides of the skillet.

4.

LET the dough rest; meanwhile, HEAT the oven to 475.

5.

SPREAD the pizza sauce over the dough, being careful to avoid tearing the dough.

6.

LAYER the toppings-sausage, pepperoni, and mozzarella-evenly over the dough.

7.

COOK pizza until crust is browned, about 20 minutes, rotating skillet halfway through cooking.

8.

REMOVE from oven and let cool for 10 minutes; SLIDE pizza onto a cutting board; SLICE into portions and serve.
