DUMP salmon into a medium mixing bowl; REMOVE pieces of skin, if desired; FLAKE with a fork.

2.

ADD egg, buttermilk, flour and cheese; STIR well; if mixture is too moist to hold its shape, ADD crushed dried bread cubes (or saltines) until desired consistency is reached.

3.

OPTIONAL: REFRIGERATE mixture until chilled to aid in forming patties.

4.

SHAPE mixture into patties, 1 per serving.

5.

SHAKE half of panko crumbs on one side of patties; TURN over; SHAKE remaining crumbs on other side.

6.

In a medium electric skillet, HEAT a shallow layer of oil at 325°.

7.

PLACE patties in hot oil; COOK until golden brown on both sides, turning once, about 10 minutes total.
