BRING water to boil in a large saucepan; STIR in grits and salt; RETURN mixture to a boil.

COVER, REDUCE heat and SIMMER, STIRRING frequently until thickened, about 10 minutes.

STIR in paprika and red pepper flakes.

4.

BEAT eggs in a large bowl; gradually STIR about one-fourth of hot grits mixture into eggs; ADD to remaining hot grits, STIRRING constantly.

5.

STIR in cheese and chiles

6.

POUR into a lightly greased 11 x 7 x 2-inch baking dish.

BAKE at 325 Funtil set, about 45 minutess.
