Easy to make wafer-like chips of cheddar cheese and almond slices

MIX the grated cheese, almonds and, to kick it up a notch, the ground red pepper.
2.
In an electric non-stick skillet heated to medium high, DROP individual tablespoonsful of the mixture allowing room for the wafers to flatten, about 8 per batch.
3.
Allow the cheese to MELT slightly and the bottom to BROWN; FLIP to BROWN the other side; COOL on a cookie rack.
