1.

SOFTEN yeast in warm water in a mixing bowl.

2.

ADD sugar, oil and salt to yeast and stir in enough flour to make a soft dough; KNEAD five minutes, adding flour as necessary to keep it from sticking.

3.

PLACE in greased bowl, turning to coat all sides; Let RISE 30 minutes.

4.

Meanwhile, in a large skillet, BROWN sausage; DRAIN.

5.

ADD pepper strips, mushrooms, onion and garlic; COOK until soft.

6.

ADD tomato sauce and spices; SIMMER to blend flavors.

7.

DIVIDE dough into equal pieces (one per serving); ROLL each piece into an 8-inch circle.

8.

PLACE filling plus cheeses and/or pepperoni as desired, on center of circle and FOLD over; SEAL by pressing on edges of dough with fingers; pinch into "ruffles."

9.

PLACE on a lightly greased cookie sheet; BAKE in preheated oven 400 Funtil nicely browned, about 15 minutes.
