Buttermilk Pancakes

1.

SPRAY surface of griddle with PAM (or other canola spray); PRHEAT griddle to 350 F.

In large mixing bowl, STIR together dry ingredients.

3.

In a separate bowl, BEAT eggs and then WHISK in oil and buttermilk.

4.

ADD liquids all at once to dry ingredients and then STIR until blended, but still slightly lumpy.

5.

POUR 1 tablespoon (for dollar cakes) or 1/4 cup (for regular size) onto hot griddle (350 F) for each pancake.

6.

COOK until golden brown,TURNING to cook other side when bubbles show on top as holes and edges become slightly dry.
