ADD cunin and coriander; COOK, STIRRING until fragrant, about 30 seconds; let COOL 10 minutes.

MEANWHILE, cut 6 ounces of the cheese into 8 slices; SET aside; coarsely GRATE remaining cheese.

In a large bowl, coarsely MASH beans with a granny fork; ADD grated cheese, egg, 1 tablespoon chipotle chiles, breadcrumbs and remaining salt.
