PREHEAT oven to 350 F.

CREAM butter and sugar thoroughly; STIR in chopped almonds and almond extract.
3.
MIX in flour; WORK with hands until dough is smooth and well blended.
4.
SHAPE scant teaspoonfuls of dough into balls.
5.
PLACE balls on ungreased baking sheet; FLATTEN with greased bottom of glass dipped in sugar; PRESS a whole almond into center of each cookie.
6.
BAKE 8 minutes or until lightly browned.
