Salmon & Sweet Potato with Roasted Broccoli
A simple, nourishing recovery dinner - rich in omega-3s, complex carbs, and vitamins

Ingredients
Directions
PREHEAT oven to 425°. Line two baking sheets with foil or parchment.
Sweet Potatoes
CUT sweet potatoes into wedges or cubes; TOSS with half the olive oil, salt, pepper and garlic powder; SPREAD on one baking sheet.
ROAST sweet potatoes 15 minutes before adding anything else.
Broccoli
TOSS broccoli florets with remaining olive oil, half the garlic, minced, salt and pepper; SPREAD on second baking sheet.
Salmon Glaze
MIX honey, soy sauce, remaining garlic, minced, and a squeeze of lemon in a small bowl; PAT salmon fillets dry; SEASON with salt and pepper; BRUSH generously with glaze.
Roasting
ADD broccoli sheet to oven after sweet potatoes have roasted 15 minutes; ROAST both 10 minutes.
PUSH sweet potatoes to the side; NESTLE salmon fillets onto that sheet, or place on broccoli sheet if there's room; ROAST together a final 12 minutes, until salmon flakes easily and broccoli edges are lightly charred. NOTE: if salmon fillets are thick, over 1 inch, add 2 to 3 minutes to the final cook time.
PLATE salmon alongside sweet potato wedges and broccoli; SQUEEZE remaining lemon over everything; SERVE immediately.
