1.

In a medium saucepan, BRING broth and water to a boil; ADD rice mix (discard packet of seasonings)

2.

COVER, REDUCE heat; SIMMER for 30 minutes.

3.

In a large non-stick skillet coated with vegetable spray, SAUTE cashews over medium high heat for five minutes.

4.

REMOVE from pan; SET aside.

5.

ADD bell pepper, mushrooms and garlic to skillet; SAUTE over medium-high heat until tender, about five minutes.

6.

STIR in cooked rice, green onions, salt and pepper; SPRINKLE with cashews.
