In a medium saucepan, bring broth and water to a BOIL.

2.

ADD rice mix (discard enclosed seasoning); COVER, REDUCE heat, and SIMMER for 30 minutes

3.

COAT large non-stick skillet with cooking spray; SAUTE cashews over medium-high heat for five minutes; REMOVE from pan and SET aside.

4.

ADD bell pepper, mushrooms, and garlic to skillet and SAUTE over medium-high heat for five minutes or until tender.

5.

STIR in cooked rice, green onions, salt, and pepper.

6.

SPRINKLE with cashews and SERVE immediately.
