PREPARE shrimp (see note); PLACE shrimp in a sealable container; in a separate bowl, COMBINE olive oil and cajun seasoning.

ADD oil-seasoning mix to shrimp; COVER; SHAKE to coat; MARINATE in refrigerator for 1 hour, TURNING occasionally.

In the meantime, COOK rice according to recipe/directions.

DRAIN and DISCARD marinade from shrimp; THREAD shrimp onto skewers.

GRILL over medium heat until shrimp turn pink, turning once, about 6-7 minutes

Meanwhile, in a small saucepan, STIR together the 3 sauce ingredients and HEAT through over medium-low heat.

Serve shrimp on skewers with sauce drizzled over; serve with hot cooked rice.
