In a mixing bowl, SIFT together flour, salt and sugar; ADD sour cream, egg, vanilla; BEAT well; thoroughly MIX in apples and (if using) raisins.

POUR into 9-inch unbaked pie crust (see recipe).

COOK at 400 F for 15 minutes; REDUCE heat to 350 F; BAKE for an additional 30 minutes; REMOVE pie.
Topping
1.
In the meantime, in a small mixing bowl, COMBINE sugar, flour, salt and cinnamon; CUT in butter.
2.
SPRINKLE over pie; INCREASE heat to 400 F; BAKE pie for additional 10 minutes.
