In a medium mixing bowl, pickle veggies by COMBINING radishes, cucumber, vinegar, sugar, salt and pepper to taste; SET aside, STIRRING occasionally.

In a small mixing bowl, COMBINE sour cream, half the sriracha, salt and pepper to taste; SET aside.

In a skillet at medium high heat, ADD a drizzle of olive oil; ADD green onions, cabbage, salt and pepper to taste; COOK, STIRRING, until softened, about 5 minutes.

ADD ground beef, garlic and additional sugar; COOK, STIRRING to break up pieces, until browned, about 5 minutes.

STIR in sesame oil and soy sauce; SEASON with salt and pepper to taste..
6.
WRAP tortillas in damp paper towels until warm and pliable, about 30 seconds.
