In a large skillet over medium heat, COOK sausage, STIRRING until it crumbles and is no longer pink.

2.

REMOVE sausage; DRAIN on paper towels; WIPE skillet clean.

3.

MELT butter in skillet over low heat; WHISK in flour until smooth; COOK, whisking constantly, 1 minute.

4.

Gradually WHISK in milk; COOK, whisking constantly over medium heat, until thickened and bubbly, about 10 to 12 minutes.

5.

STIR in sausage, salt and pepper.
