PREPARE rice according to recipe.

Meanwhile, in a large saucepan over medium heat, HEAT milk, STIRRING occasionally.

ADD sugar and salt; COOK, stirring constantly, until sugar completely dissolves.

ADD one-half of evaporated milk; COOK until mixture is hot.
5.
ADD raisins; COOK until raisins are soft.
6.
In a small mixing bowl, thoroughly MIX together remaining evaporated milk and the egg yolks; ADD to milk mixture.
7.
BLEND in rice; REMOVE from heat.
8.
ADD vanilla; thoroughly FOLD in beaten egg whites.
