In a large saucepan over medium heat, ADD oil; SAUTE onion, garlic, leek, shallot and bacon.

2.

REDUCE heat; ADD potato, broth and dill; COVER; SIMMER for 30 minutes.

3.

REMOVE potatoes; PROCESS potatoes in blender with one cup hot broth.

4.

STIR blended potato back into remaining soup.

5.

ADD chopped fresh spinach; SIMMER until cooked through, about 5 minutes; SEASON to taste.
