PREHEAT oven to 450°.

PLACE all ingredients in a large plastic bag; SHAKE until potatoes are evenly coated.
3.
TRANSFER potatoes to shallow baking dish (or roasting pan); BAKE 20 minutes; TURN potatoes with a spatula.
4.
Continue BAKING until potatoes are tender and golden brown, about 20 more minutes.
5.
REMOVE from oven; GARNISH with chopped parsley, if desired.
