PREHEAT oven to 350°.
GREASE a 9 x 5 inch loaf pan with cooking spray; SPRINKLE with flour; SHAKE off excess; SET aside.
In a mixing bowl, ADD both flours, baking powder, baking soda, salt, cinnamon, and ground nutmeg; WHISK until thoroughly combined; SET aside.
In another large mixing bowl, ADD sugar, coconut oil, eggs, yogurt and vanilla; BEAT with an electric mixer on medium speed until incorporated.
ADD the flour mixture; BEAT on low speed until just combined, then BEAT on medium speed for 30 seconds.
STIR in the grated zucchini and apples.
POUR the batter into the previously prepared loaf pan.
BAKE until a toothpick inserted in the center comes out clean, about 50 to 55 minutes.
REMOVE pan from oven; let COOL in the pan on a wire rack for 20 minutes.
REMOVE the bread from the pan; LET completely cool.
CUT into slices after cooling.
1. A whole zucchini and a whole apple will each produce about 1 cup grated. 2. May use either pecans or walnuts.
