PREHEAT oven to 375°.
In a large skillet over medium heat, HEAT oil; ADD chicken and garlic; COOK, STIRRING, until chicken is done, about 6 to 7 minutes.
STIR in all remaining ingredients except bacon.
Lightly COAT 1 1/2 quart casserole with cooking spray; SPOON in chicken mixture; COVER.
BAKE 15 minutes; UNCOVER; SPRINKLE bacon over top; continue BAKING until heated through, about 10 more minutes.
May substitute canned artichoke hearts, drained and chopped, for the spinach.
