Great way to use up some of those turkey leftovers; also works with chicken
In a food processor, PROCESS turkey until just ground; TRANSFER to mixing bowl.
PROCESS parsley, celery and onion until finely chopped; ADD to bowl.
In the mixing bowl with turkey and chopped veggies, ADD half the panko, mayo, egg, lime juice, chile paste and Worcestershire sauce.
Form into 3-inch patties; coat with remaining panko.
In a large electric skillet, MELT 1 tablespoon of butter per batch over medium heat; COOK patties on both sides, 4 per batch; patties should be evenly browned, with a center temp of 165°, in about 10 minutes.
In a small saucepan, COMBINE white wine, lime juice and garlic.
Over medium heat, bring wine mixture to a boil; REDUCE heat; SIMMER, uncovered, 5 minutes.
REDUCE heat to low; WHISK in whipping cream and butter; continue to whisk until butter is melted; STIR in sweet chile sauce.
Serve patties with lime wedges and sauce
May substitute chicken broth for white wine May also substitute leftover cooked chicken for turkey
