PREHEAT oven to 350° for standard loaf pan, or to 325° if using two-piece (self draining) pan.

2.

MIX all ingredients in a large bowl.

SHAPE mixture; PLACE in loaf pan lined with foil.

4.

COVER with foil; BAKE until done through, about 1 to 1 1/4 hours.

5.

REMOVE foil toward the end of cooking to brown the loaf.

6.

REMOVE from oven; PLACE on cooling rack; let STAND for 15 minutes before serving.

Freeze leftover chipotle and sauce for later use. TIMING (for 6:00 ready-to-eat) 4:00 If refrigerated, set out dish to warm 4:20 Preheat oven to 325 (or 350) 4:30 Put dish in oven 5:30 Remove foil 5:45 Take out of oven, place on rack 6:00 Serve
