When hard boiled eggs cool enough to handle, PEEL; SLICE in half.

SCOOP yolks into a bowl; MASH yolks with a fork.

3.

ADD mayonnaise, vinegar, salt, pepper and mustard to taste; STIR with fork until smooth.

4.

REFILL egg white halves with mixture.

Sprinkle tops of eggs with paprika before serving.

To hard boil eggs: BRING eggs to boil starting with cold water to cover; when eggs begin to boil, reduct heat to just above a simmer, PUT on lid and cook for 20 minutes. DRAIN eggs and cover with cold water and ice cubes to cool quickly (makes them easier to peel).
