In a mixing bowl, WHISK together the sugar, flour, eggs, extract and salt; SET aside.
In a medium sauce pan, MELT the chocolate squares over low heat, STIRRING constantly once the melting begins.
ADD milk; continue to heat; STIR until well blended.
ADD sugar-flour mix to melted chocolate; INCREASE heat to medium; COOK, STIRRING constantly, until pudding thickens.
May serve pudding either hot or cold in custard cups. Top each serving with tablespoon of whipped cream and slice almonds.
1. May substitute 1 teaspoon vanilla extract for each 1/2 teaspoon almond extract 2. May substitute regular whipped cream (see recipe) for Cool Whip
