In a large bowl, gently COMBINE the 11 burger ingredients until evenly mixed; FORM into patties.

Before starting grill, lightly oil the grill rack to prevent sticking; preheat to medium high.

GRILL burgers until center reaches 165°, approximately 6 minutes per side, TURNING once; SPRINKLE tops with shredded cheese; GRILL until cheese is melted, about one more minute.

Spread

1.

While burgers are grilling, ADD spread ingredients to a small bowl; STIR until combined.

Spread chipotle-mayo on a bun/roll of your choice, add burgers; include lettuce, tomato, onion and pickles as desired.

1. When using lean beef, the patties tend to crumble, so we add an egg to help keep things together. This is optional. 2. Chipotle chiles in adobo sauce are in a small can, typically found in the Mexican section of the supermarket.
