Directions

1.

SPICED PECANS (*see note)

2.

In a medium bowl, COMBINE butter, salt, cinnamon, red pepper and hot sauce.

3.

ADD pecans; STIR until coated.

4.

On a ungreased baking sheet, SPREAD pecans in a single layer.

5.

BAKE at 300° for 15 minutes, STIRRING once

6.

COOL completely on baking sheet on a wire rack.

Dressing

1.

In a jar, COMBINE olive oil, vinegar, mustard, salt and pepper; COVER tightly; SHAKE vigorously; SET aside.

Salad

1.

In a large bowl, COMBINE lettuces, apple, cheese and spiced pecans; TOSS gently.

2.

SHAKE dressing; POUR over salad greens; TOSS gently.

Select a tart red apple; leave unpeeled. Spiced pecans or also good alone as an appetizer or snack.
