CUT 1/2-inch slices from middle of bread loaf; BRUSH both sides of each slice with oil.

2.

COVER half the bread slices with the feta, then with tomato; SEASON with oregano, pepper and salt.

3.

COMPLETE sandwiches by topping with remaining bread.

4.

In a non-stick skillet, HEAT 1 tablespoon of olive oil over moderate heat until hot (but not smoking); COOK sandwiches until golden, about 2 minutes on each side.

May use any of a variety of breads with firm crusts and of good size; original recipe suggests a "round loaf of crusty bread."
