In an electric skillet over medium heat, STIR COOK sliced onion sections in oil until golden, about 6 minutes.

2.

ADD jalapeno, garlic and ginger; STIR COOK until jalapeno is softened, about 1 minute.

3.

ADD cumin, coriander, salt, turmeric; STIR COOK until fragrant, about 1 minute.

4.

ADD tomatoes; STIR COOK until tomatoes break down and sauce is thickened, about 4 minutes.

5.

ADD shrimp; COOK, STIRRING occasionally, until just cooked through, about 3 minutes.

6.

REMOVE from heat; STIR in half of cilantro; GARNISH with remaining cilantro.

To prepare onion, first cut in half lengthwise; place half on cut side; then slice lengthwise into thin sections.
