1.

REMOVE milk from refrigerator; let STAND at room temperature.

2.

PEEL sweet potatoes; CUT into large chunks.

3.

PLACE potato chunks into saucepan; FILL with enough salted water to cover.

4.

BRING potatoes to a boil; REDUCE heat; COVER; let BOIL until very tender, about 25 minutes.

5.

ADD butter, brown sugar, salt and spices to the potatoes.

6.

Partially MASH with a hand masher; ADD 2/3 of warmed milk; continue to MASH until blended but lumpy.

7.

ADD remaining milk; BLEND to desired consistency; TRANSFER to a warm dish; SERVE immediately.
