PREHEAT oven to 350 degrees.
In a large mixing bowl, COMBINE dry ingredients.
ADD eggs, milk, oil and vanilla; BEAT for 2 minutes on medium speed; STIR in boiling water (batter will be thin).
POUR into two 9" round pans or one 10" x 13" greased and floured pans; BAKE 25 - 30 minutes.
Frost with powdered sugar or chocolate frosting.
If baking in two round pans for a layer cake, COOL 10 minutes and remove from pans to wire rack. In any case, COOL cakes completely before frosting.
