PREHEAT oven to 250 F.

2.

RINSE ham with water; PAT dry with paper towels; PLACE on rack in a large roasting pan.

3.

MOISTEN ham with vinegar; COMBINE brown sugar and ground cloves; COAT ham with mixture.

4.

SET apple quarters in roasting pan; ADD water; SEAL pan tightly with lid or foil wrap.

5.

BAKE until meat is falling off bone, at least six hours.

6.

PULL ham apart using tongs.

Place meat in serving dish, or into crock pot on lowest setting if serving later. Serve with barbecue sauce (see recipe for mustard-based sauce) on the side.

May use any inexpensive cut of ham; can also use the butt end off a regular smoked ham.
