1.

GRILL steak on barbeque (*see Note 1) over medium heat until done, about 8 minutes per side.

2.

SLICE steak into thin strips, ARRANGE on lettuce leaves; GARNISH with peanuts and green onion strips.

Dressing

1.

While steak is grilling, PROCESS onion, green onions, mint leaves, peppers, cilantro in a food processor until minced.

2.

ADD lime juice and fish sauce; PROCESS until blended.

Serve with cilantro dressing on side.

1. Steak may be done under broiler in case of inclement weather (but it won't be as good!) 2. 1 lime typically yields about 1/4 cup juice.
