COMBINE eggs, salt, pepper, mustard, onion and cheese; SPREAD in bottom of pie shell.
ARRANGE slices of tomato, green pepper and salami on top of the egg mixture; SPRINKLE with oregano.
BAKE until pastry is cooked and egg mixture is set, about 30 to 40 minutes.
This is not a custard-type quiche.
