LINE a baking pan with aluminum foil; GREASE lightly;
CUT fillet into portion size, if needed; PLACE salmon skin-side down on foil.
SPRINKLE with Essence, salt and pepper; DOT with butter.
FOLD aluminum foil around salmon; SEAL tightly.
BAKE at 350° for 20 minutes; OPEN foil.
BROIL 4 to 6 infrom heating element until fish flakes easily with a fork, 8 to 12 minutes.
Essence is Emeril's spice blend to "kick it up a notch." It may be purchased at the store or easily made from scratch (see recipe in Master Cook)
