Based on original "Edisto Breakfast Shrimp" recipe
PREPARE shrimp (thaw, peel, devein) as needed; RINSE shrimp; PAT dry; PLACE in medium bowl.
COMBINE lemon juice, ground red pepper and Cajun seasoning; STIR into shrimp; SET aside.
PREPARE grits according to recipe; before serving with shrimp, STIR in cheese, allowing to MELT.
While grits are cooking, in a medium skillet, HEAT butter over medium heat for 30 seconds; ADD onion and pepper; COOK until vegetables are tender, about 5 minutes.
STIR flour into vegetables; COOK until golden, about 2 minutes.
Carefully STIR in broth; ADD shrimp; COOK, stirring, until mixture is thickened and bubbly and the shrimp has turned opaque, about 3-4 minutes.
SEASON to taste with salt and pepper.
Serve hot shrimp over bed of hot grits.
May also substitute 2 tablespoons bacon drippings, depending on condition of your heart.
