In a large saucepan, HEAT sesame oil over medium high heat.

2.

ADD chicken, carrot and celery; COOK and STIR until vegetables are slightly softened, about 4 minutes.

3.

ADD ginger and garlic; COOK an additional minute.

4.

STIR in tomatoes, coconut milk, curry paste, salt and pepper; BRING to a boil; REDUCE heat; COVER.

5.

SIMMER for 10 minutes; ADD edamame; COOK an additional 5 minutes.

6.

STIR in spinach, green onion, and lemon zest; COOK until spinach is wilted.

7.

REMOVE from heat; TOP each serving with cilantro and peanuts.
