MIX zucchini, oil, and vanilla; ADD dry ingredients and MIX (do not beat)

2.

ADD chopped nuts and/or chocolate chips, if desired.

3.

POUR into 9 X 13-inch greased baking pan; BAKE at 350F for 30 minutes.

TOP with frosting of choice--see note

1. Zucchini may be peeled, but it is not necessary 2. For topping, may use vanilla icing, EASY CHOCOLATE ICING or sprinkle with powdered sugar.
